- Course objectives
- Importance of industrial microbiology. Theoretical background of industrial microbiology. Engineering consideration. Sterilisation of media and air. Aeration and mixing. Substrates for microbial processes. Kinetics of microbial processes. Genetics of industrial microorganisms. Production of biomass. Milk fermented products. Fermented products (ethanol, beer, vine, lactic acid etc). Products of primary metabolism (aminoacids, vitamins...). Products of secondary metabolism (penicillins, cephalosporins, peptide antibiotics, mycotoxins,...). Microbial transformations and conversion (sterols, polysaccharides, fatty acids, fat, oils).
