- Course objectives
- Nutritional epidemiology focuses on the relationship between nutrition and the incidence of disease. The basic starting point is a good deal with the general principles of epidemiological studies, which further develops the specific methodological approaches for the evaluation of the various parameters of the diet and nutrition. The specific result of the use of adequate methodological approaches is then the evaluation of the relationship of nutrition to the risk to the most specific groups of diseases such as cardiovascular diseases, cancer, diabetes, osteoporosis, and more, and the ability to define the relevant risk and protective factors according to the current state of knowledge. In the context of mastering the subject we assume knowledge of all the essential theoretical principles, and also practical mastery of the methodology regarding the individual evaluation of nutrition, in particular, within the meaning of anamnestic methods of evaluating the characteristics of the diet, but also the methods of evaluation of nutritional status.
- Syllabus
- 1) Introduction to nutritional epidemiology: what is the nutritional epidemiology and the scope, historical development, and knowledge, the current nutritional epidemiology-overview of the extent, scope and methodology of focus, the current guidelines and objectives. Typical nutritionally-epidemiological problems in history and now. 2) The basic components of nutrition (diet, foods, nutrients, other components of different origin), the sources of variation in animal nutrition. The complexity of the nutrition factors, risk and protective factors. 3) Key features of epidemiological studies: types of their layout (design), methods of exposure assessment, analysis and interpretation of data, the factors of the quality and validity. 4) A comprehensive overview of the possible ways of obtaining information relating to human nutrition. Group and individual nutritional evaluation, focused on the composition of the diet, the anthropometric, laboratory and clinical consequences. Overview of the possible ways of obtaining data on the occurrence of diseases. 5) Dietary assessment: Retrospective methods: Food frequency questionnaire, recall, nutritional habits, preferences, nutritional history, combined and brief methods. Prospective methods: One or more days record. The realistically available nutritional software and its practical use. 6) Anthropometric methods, and the indicators of nutritional status 7) The importance of energy in nutritional epidemiology. Energy intake and expenditure, energy metabolism. The importance of physical activity. Physical activity assessment. 8) Biochemical indicators of nutritional status 9) Alcohol 10) Nutrition and cardiovascular disease 11) Diet and cancer 12) Nutritional epidemiology and dietary guidelines.
