- Students will learn the basics of food toxicology.
- Syllabus
- Subject: Food Toxicology Number of hours per week: 2/0 (lecture / practicum) Students will learn about toxic substances in food (natural and contaminants), with their resources and event. inputs into food chains, with metabolism and health risks. Topics: Natural toxicants * Substances of food intolerance * alkaloids * saponins * cyanogen * glucosinolates * Phenolic compounds * lectins * amino acids * Biogenic amines Contaminating toxicants * Toxic minerals (elements, anions) * nitro compounds * Polycyclic aromatic hydrocarbons * Persistent organochlorine compounds Study of the subject Food Toxicology testing is completed
